Coffee Cake

In a large bowl, mix:
    4 cups white flour
    2 cups whole wheat flour
    2 cups sugar (white or turbinado)
    2 tsp. cinnamon
    1 1/2 tsp. nutmeg
    1 tsp. allspice
Then use hands to blend in small pieces of:
    2 sticks (1 cup) margarine
Set aside one to two cups of this mixture, for topping.
There should be small but visible pieces of margarine in the mixture.
Now add to the main bowl:
    2 1/2 cups unsweetened, plain soymilk at room temperature
    2 tblsp. baking powder
Blend these ingredients and pour them into one baking pan. The batter should be no more than two inches thick, so use whatever size pan will allow this cake-sized thickness. Next, evenly distribute the topping mixture over the entire batter. Then add PECANS as the final topping.

Bake at 375 degrees for 25 to 30 minutes. Cool for 10 minutes before slicing.
