Delicious Pecan Pie made with No Egg products

In a medium saucepan, combine:

 3/4 cup maple syrup
 1/3 cup brown rice syrup
 1 tablespoon vanilla extract
 1 tablespoon minced fresh ginger
 1/4 teaspoon sea salt

Simmer the mixture for 5 minutes, allowing the syrups to begin caramelizing.
Remove from the heat and allow to cool.

In a blender or small electric grinder, grind together:

3 tablespoons flax seeds
1/3 cup soy milk

You should end up with a very gummy paste.  Now add:

1 1/2 teaspoons arrowroot or cornstarch
 

Now pour the syrup from the pan into the blender with the other ingredients.
Blend until you have a smooth consistency.  Then measure out:

2-1/2 cups pecans

Place the pecans into a 9 " pie crust.
Slowly pour the mixture from the blender into the crust, over the pecans.

Cook the pie for 30 minutes at 350 degrees.  Allow to cool before serving.
