Ingredients:
3 and 1/2 cups of packed brown sugar
1 cup of heavy whipping cream (do not whip)
1/2 cup butter (1 stick)
1-2 cups whole pecan halves
In a large, microwave-safe bowl (at least 10 cups or 2.5 liters), mix the brown sugar with the unwhipped cream until there are no big lumps. Cook in the microwave, uncovered, for 11-14 minutes on High. The mixture must be bubbling and VERY hot for this to work. Carefully remove the hot bowl and stir in the stick of butter by cutting it into pats. Blend together then add 1 to 2 cups of pecans, as desired. Let the mixture sit for a minute and thicken. Then drop by tablespoonfuls onto a piece of foil or waxed paper. Let them cool and then enjoy.
